Ingredients
- Sweet potato cubes
- Red pepper diced
- Green pepper diced
- White onion and red onion
- Fresh oregano
- Eggplant
- Canned diced tomatoes
- Spices: bay leaves, chili, provincial mix, ground cumin, ground black pepper, ground coriander
First you cut the eggplant in slices. Put salt on them and let it soak for a little while. Then rinse them of with water, so the salt disappears. If you have everything chopped; sweet potato, peppers, onions mix it and put half in in the oven dish. Add half of the dices tomatoes and add a little bit of the spices. Then you make a layer with the eggplant and you repeat the veggies and other half of the can diced tomatoes. Add again a little bit of spices and put it in the oven on 180 degrees for 30 minutes.
In the meanwhile, you need:
- Old cheese
- Kale
- Cabbage
- 1 table spoon sambal
- Sundried tomatoes
Stir fry the kale and cabbage with a tablespoon of sambal and some sun-dried tomatoes. After 30 minutes you add this to the oven dish and add old cheese slices on top. Put it back in the oven for approximately 10 minutes. Depending on how you prefer the melted cheese.
