To bring….Banana pie

If people invite me to have dinner, I always ask if I can bring something. Sometimes they say; no not necessary, but since I make this Banana Tarte Tatin, people ask me to make this pie. It’s so easy…..

5 bananas chopped in 2cm pieces
50gr nuts chopped
100gr brown sugar
75gr butter
1 sheet of puff pastry. The size of your baking dish (round is the prettiest). Here on Bonaire we have only the Dutch puff pastry – that are small squares. I make 1 sheet out of 8 small one. 4 is the size, and put 4 on top and roll it with a rolling pin.

1. Make caramel from the sugar and butter.
2. Put it in the baking dish.
3. Add the chopped nuts
4. Add the bananas
5. Put on the puff pastry. Try to put the pastry a little bit under the banana at the sides.
6. Make small wholes so the steam can escape.

Kentucky fried cauliflower

Ingredients

  • Cauliflower
  • 2 egg yolks
  • Cornflakes
  • Flour
  • Spices; smoked paprika, garlic powder, ground black pepper, Euroma; Argentijnse grill kruiden (tomato, paprika, chili)
  • Sauce; mayonaise, yoghurt, harissa, lemon juice
  • Airfryer or fryer pan

Preheat the air fryer or fryer pan 180 degrees.
Clean the cauliflower and cut small pieces – enough for 1 bite.
Crush the cornflakes with the spices you prefer. See what I used above.

Prepare the KFC cauliflower
1st. you put the cauliflower in flour
2nd. you put the cauliflower in egg yolk
3rd. you put the cauliflower in the crunch

We used an airfryer, because it’s a healthy dish, I didn’t want to fry it (haha). Put it in the fryer for about 12-15 minutes. Ready to serve.

As sauces we mixed everything together, and you can for course add something you like.

Cauliflower tahini steak

Ingredients

  • Cauliflower
  • Olive oil
  • Tahini
  • Lemon juice
  • Za’atar spices
  • Grana Padano

Preheat the oven on 220 Celsius.
Cut the cauliflower in slices – approx. 1 thumb (1 inch).
Use 4 tablespoons of tahini, 2 tablespoons of lemon juice, 4 tablespoons of water; mix this in a bowl.

Put the cauliflower with olive oil in a baking dish, every side 10 minutes in the oven. Then put the tahini paste on the cauliflower and sprinkle some za’atar spices on top. Put the dish back in the oven for approx. 10 minutes.

As finishing touch I added grated Grana Padano on top. Thinking about it, it’s maybe a weird combination, but the taste is delicious. It tastes a little bit like truffle.

Cauliflower tahini steak

Asian zucchini

Ingredients marinade

  • Rice vinegar 2 tablespoons
  • Olive oil Extra Virgin 2 tablespoons
  • Soy sauce 2 tablespoons
  • Honey 1.5 tablespoon
  • Grated ginger 1cm
  • Lemon juice 1 tablespoon
  • Grated lime
  • Sambal 1 tablespoon

Mix it all together.

Make strings of the zucchini and marinade for at least one hour.
Serve it with whatever you like, for example salad with red radish, carrots, sweet potato, cucumber, little gem, edamame or with a Noodle salad, up to you.

Due to the many positive replies on my Instagram post, I will share with you my chart.

Keep calm and chart on….

It needs some explanation. The 1st day of your cyclus is your 1st menstruation date!
Fill in the actual date / month on the sheet, so you can always review your period.

I make this sheet every month handwritten. I take a FLOW notebook and tear out a page. Because it’s selfcare / self love; I like it to make it ‘special’ and give it some extra attention. But if you don’t have any time, I can send you an Excel if you prefer, so you can fill it in on the computer.

On the left you see different words. On one side mostly emotions and on the other paper side-effects and circumstances. Sometimes I mention (1-10) , 1 means very bad – 10 means perfect! The topic energy and sleep; I fill it in every day. The other topics depends. The words I mention are personal – I improved my sheet a couple if times. Maybe some words do not resonate for you, you can replace them of course.

Another thing I use is, sometimes I wake up very happy – and I have mentioned 7 for example, but in the evening I am a little bit sad, then I mention by ‘sad’ 3 with a circle around it. I divide the day in 1; morning – 2; day – 3; evening. Maybe you wake up and you are full of energy but something happens or maybe not – but in the evening you feel in disbalance – I write 3 with a circle. Maybe you are very tired in the morning (1), but you did some yoga and me-time and you are energetic (2) in the afternoon.

Important note : So as you see I make a distinction between the numbers (1-10) and morning (1) – day (2) – evening (3). The day indicators have a circle around it. This is of course totally up to you how you like this. See pictures below to make it more clear.

Something else what I do, you see the word Sex, here I draw a heart, and if you had sex 2 times that day, you draw 2 hearts. And with the word Sports, I mention the first letters of the sport I did; BeachTennis, Kite, Tennis, Hike. See picture; it’s an example, because day 1 of the cycle is your menstruation – day 1; I don’t have sex, but maybe you do.

Reminder this is all for your own insights; so be honest!

According my opinion, this really really really helps. It needs some motivation – to fill it in EVERY DAY – but it’s 2 minutes.

Bliss balls

Dates Almond Bliss Balls

Ingredients
  • 150 gr dates
  • 60 gr almond
  • Cinnamon powder
  • Pinch of salt
  • Hazelnuts around ten – as a suprise in the balls
  • teaspoon raw cacao powder

Put all the ingredients in the food processor except the hazelnuts.
Feel if its sticky enough to make balls from the ‘dough’. Make a ball how you prefer and add a hazelnut in the middle – as a surprise 🙂 In total the balls I make are around 20 gram each. So it’s a nice snack. If you had one – you want another…..

In one batch I make 5 date Almond bliss balls and then I add some stuff to the dough for the Bounty bliss ball.

Bounty Bliss Balls

Ingredients
  • couple of more dates around 5
  • fresh coconut left over from the coconut milk – but you can use shredded coconut as well
  • 3 table spoons grounded flax seeds
  • 2 table spoons oats
  • teaspoon raw cacao powder
  • hazelnuts – as a suprise in the balls

Add some dates, 5 big spoons of shredded coconut, flaxseeds, oats, cacao and mix again. Make the balls and add a hazelnut in the middle if you prefer.
I had fresh coconut left over – I did this in the oven to make coconut flour, and this I used for the crunch. But you can use shredded coconut as well.

Tomato rice

Sometimes its allowed to not cook as you are used to. Today was a very easy dish…..

Ingredients

  • Grilled veggies (bought frozen ready-made; zucchini, bell peppers, onions, eggplant)
    added extra veggies; pumpkin and green beans
  • Garlic
  • Fresh piece turmeric
  • Hot yellow pepper
  • Herbs / spices; thyme, oregano, sage, bay leaves
  • Diced tomato in can
  • Kind of rice you prefer; I had chickpeas , lentil rice
  • Optional; Grana Padano

1st. Heat up the veggies with garlic, turmeric, hot pepper and herbs / spices. I prepped it already in the afternoon so it’s get very tasty with the herbs etc.

2nd. If you are ready for dinner you open 1 can of diced tomatoes, put it in a cooking pan. Add the can with water and at it to the same pan. Add the rice you prefer – and prep it like mentioned on the box. Cooking time is different for each kind of rice.

If the rice is almost ready heat up the veggies again. If the rice is ready, drain the rice with a colander but keep the tomato juice. Add the rice to the veggies and if you like add some juice – I didn’t, but put it in the fridge for another dish. Up to you 🙂

Za’atar spices arrived

I am totally not complaining about living on a rock ; Bonaire, Paradise, but it makes me miss a lot of ingredients…. Friends of mine just sent me a package with different kind of spices – happy!

I picked up the spices today, and I immediately made my lunch with Za’atar spices!

Ingredients

  • Cauliflower rice
  • Half a can chickpeas
  • 1 tablespoon Tahini
  • 1 teaspoon Za’atar
  • 1 teaspoon Garam Masala Jonnie Boer
  • Pomegranate
  • half a lemon
  • Optional: Toufayan wholesome wheat flatbread

First marinade the chickpeas in Garam Masala. Add the Za’atar to the cauliflower rice.
Mix tahini with 1 tablespoon water, lemon juice, some salt and pepper. Put the rice and chickpeas in a bowl, sprinkle the pomegranate on it and add the dressing.

Next time if I make it I will add some green salad, for example arugula.

The flatbread I put in the panini grill, I love it crispy and use it as my spoon.

Grand breakfast party

.. On Sunday’

Since I was a kid, Sunday is for me a ‘Special Breakfast Day’. In my childhood we always had oven bread, boiled egg, fresh orange juice and classic music from Bach <3.

Plate:

  • Fruit salad; banana, grapefruits, papaya, passionfruit, fresh mint, home-made coconut nibs.
  • Home-made Coffee with my favorite Napoli Perla beans. Well favorite; on Bonaire we have a lack of choices – but they are very nice. I also tried the Perla Bio beans, but I prefer Napoli.
  • Fresh mint tea (mint from my own garden)
  • Bliss balls with from oats, apricots, lemon and orange zest.
